Welcome to my 100th post - it's exciting (and a little embarrassing, that it has taken me 4 years to create it). It's kinda snuck up on me ... and so, I just have a standard post to share with you - 'Spicy Prawns & Mash'.
Before I begin, I'd just like to thank everyone who reads this blog, for all who leave your wonderful comments, for the friends I've made along the way, and to all who have eaten my food - THANK YOU!
I've been building my spice collection slowly, and am now a little sad that I didn't purchase the Tupperwear Spicy rack at the last Tupperwear party I went to. (And so the question arises again - to hold a Tupperwear party or not to hold a Tupperwear party?)
These spicy prawn are 'oh so delicious' and the spice mix goes excellent with baked chicken as well!
Spicy Prawns & Mash
500 grams of peeled and de-vained prawns
2 brown onions
1 red capsicum
2 cans of whole tomatoes
4 gloves of crushed garlic
2 tbsp brown sugar
2 tbsp sumac
1/2 tbsp cayenne pepper
olive oil
6 large potatoes
2 cloves of crushed garlic
1/4 cup of milk
2 tbsp butter
salt & pepper
Into a saucepan place a drizzle of olive oil and the diced brown onion, cook until translucent. Add the diced capsicum, garlic, sumac and cayenne pepper and cook off the spices for 2 minutes. Add the canned tomatoes and brown sugar and then simmer for 20 minutes.
Meanwhile, peel the potatoes and pop them into a pot full of boiling salted water with the crushed garlic. Drain the potatoes when they are soft, keeping the garlic.
Add the prawns into the sauce and simmer for 15 minutes.
Return the potatoes and garlic back onto the stove. Add the milk and butter and mash!!! Season with salt and pepper. Serve with the spicy prawn mix.
